|2 tbsp Ghee|
|3/4 cup Sugar|
|few strands Saffron|
|2 tbsp Milk powder|
Going ahead with the series of apple desserts, it is Coconut Apple fudge. This fudge is soft, chewy and rich .
This is another rich apple dessert. This coconut apple fudge is a slight variation of our regular coconut burfi but with the addition of apples and milk powder to it. The apples in it makes the burfi to get a fudge texture and the addition of milk powder makes it rich in texture and taste.
If you have started the Diwali preparations , then I think this would be a wonderful change to the coconut burfi which you might prepare. Do give this a try and you will not stop eating just one. If my dietitian sees this I am sure she is not going to be very happy about it:).
Peel the skin of the apple, core it and grate it finely
Soak saffron in 2 tbsp of warm milk
Grease a plate with ghee and keep aside
Chop the nuts and keep aside
Heat ghee in a pan on slow heat. Add the grated apple and cook it on low flame till the moisture evaporates
Now add the coconut and sugar and mix well and continue to cook. You will see that it becomes a little watery now
At this stage add the milk powder and saffron and cook on low flame till everythig comes togther in a single ball like mass
At this stage, switch off the fire and add nuts. Mix well
Transfer this to the prepared tray and flattten it into a 1" layer immediately with the help of a flat spatula and cool for a while
Cut it with a greased knife into small squares.Cool it in the refridgerator for 4 hrs and then serve these delicious squares
